Am I able to be a master at all crafting skills? Or am I limited to one or a few? Is it mini-game oriented like Final Fantasy XIV or automatic? Is crafting worthwhile? Which is the most helpful? I've been keeping up with the game for a while now, but have never really looked into crafting so I have no idea how it works =/

You can master everything. No mini games, very grind based crafting. Not really worth it imo.

Crafting is unfortunately not one of the highlights of the game. The interface / advancement in it is really terrible from what I've seen, and then there's the whole issue with it being ridiculously grindy.
There is worthwhile stuff from it, at least max lvl though. I've heard nightmare stories about how long the stuff takes to make though.

From hearing players of KTera talk about it, it's best to wait until max level, as you can take quests to raise your skill pretty easily, and that is where the good stuff is (like best in slot stuff from what i hear). Very expensive at level though, so that's why it's best to wait. I tried to do the one quest to get to tailor 50 and it kept me broke. It's click and wait for stuff to be made, sad fewer games don't have the minigames of FFXIV, i liked that in that game.
The one thing they have mentioned is to gather at level if you can though, your skill goes up, get buffs from it, and you won't have to go backtrack to gather later if you want to up it or get mats.
