I feel that the current stamina system is an unnecessary time sink and just takes away from the action in the game by incorporating too much downtime. It sucks being in an awesome fight with a BAM, having a few people die during the fight, but having to sit around a fire for a few minutes to recover stamina (recovers awfully slow when it's below 80%). Not everybody carries around stamina potions and I'm not about to walk around with a ton of potions to hand out every time this happens =/
It doesn't have to be completely removed, but it really shouldn't have such a profound impact on HP/MP like it does now. Hell, I'd rather have the weakness system that Final Fantasy XIV has where they just cut your HP/MP in half if you die for a few minutes. It's better than having to take a break from combat after a while because your HP is too low to take any hits.
