What confuses me is that several of the hairstyles have visible human ears AND animal ears.

That's intentional, they use human ears to hear normal things and the animal ears to listen to nature. It's in the lore.

I wish we could have at least chose the hair and ears/tail separately, I couldn't find a combination I really liked. There was a hair style I wanted but I didn't like the ears. There were ears I wanted but didn't like the tail. I ended going with something in-between and I'm not even sure if my Elin is supposed to be a mouse or a cat.
